Singapore Laksa/ Coconut Curry Noodle

Laksa is one of Singapore’s most popular dishes. It combines ingredients from Chinese, Malay and Indian cuisine and with the addition of coconut milk produces a rich, full-bodied coconut curry soup that is a meal in itself. This versatile soup base adapts perfectly to chicken, prawns, tofu or vegetables. For the noodles, use Hokkien noodles or rice vermicelli (bee hoon), or both at once and add chilli sambal to taste for extra zing.
